Cindy and I have been coming to Belize for four years now. We try to visit twice a year and to visit other parts of Belize when possible. So far we’ve been to a number of Mayan ruins, inland and island excursions, fishing, snorkeling and more. All the tours have been great fun and interesting but some of the experiences we remember best are the simple things.
Since neither of us are much on cooking, we eat out most of the time and we usually stroll the beach to San Pedro late in the afternoon to go to a restaurant. These walks to town have become a favorite pastime. In the process we have the time to watch shore birds, talk to fishermen cleaning the days catch and enjoy the beauty of the waves and barrier reef. You never know what small treasure you might find on the beach and we have met some great people while strolling the beach. We look forward to these 45 minute walks.
Shopping in San Pedro is another of the simple pleasures of Belize. You can look through all manner of handwoven blankets and garments, handmade furniture and woodwork, carvings, paintings, you name it. All are Belize originals and you have the opportunity to meet and talk to shop owners and artisans. Its the kind of experience you don’t find at the mall.

Could there be a better place to spend the Christmas and New Year’s Holidays Season than a warm, sunny beach in the Carribean? Some good friends of ours who are avid scuba divers try to schedule a week in Belize during the Holidays to escape winter and re-charge from hectic work schedules. Imagine spending a week or two on Ambergris Caye instead of battling the snow and cold. At Caribe Island Resort Ambergris Caye our friends can lounge on the beach (one of the best beaches on the island), go on some full or half day scuba trips or go on any number of other excursions.
Now is the time to plan a Holidays getaway to the Caribbean. Christmas and New Year’s weeks dates fill up fast. At Caribe Island Resort we are often booked by late summer for December and January dates. It becomes increasingly difficult to book flights to the Caribbean during the Holidays and plane fares tend to increase as the planes fill up. It pays to make arrangements early and lock in lower plane fares.
An internet search on Ambergris Caye will provide lots of information on things to do and see in Belize as well as links to various resorts. Caribe Island Resort is a small, boutique style resort with only 19 rental units so we are never crowded. Caribe Island is about 2.5 miles from the village of San Pedro. It is a great place to kick back and relax for a week or two.
Belizean waters support one of the most productive fisheries in the world and Ambergris Caye offers anglers a variety of options. The extensive salt water flats surrounding Ambergris provide world class fishing for bonefish, permit and tarpon. All three species are available year round although springtime and into the summer are probably the best times. Because Belize enforces a strict catch & release policy for bonefish, permit and tarpon, the waters surrounding Ambergris Caye are literally teeming with these sport fish. Moreover, with miles and miles of flats to fish, the angler rarely sees another fisherman.
Another fishing option is reef fishing. This is probably the most popular fishing excursion in Ambergris Caye. Fishing around the barrier reef yields snapper, grouper, barracuda and more. Action is non-stop and since the waters inside the barrier reef are calm, it is a very enjoyable way to fish and a very popular family adventure. Reef fishing trips are either half day or whole day and Ambergris guides can usually put anglers on the types of fish they are most interested in catching. Fresh grilled fish makes a great meal.
Deep sea fishing outside the barrier reef is also a popular adventure. Wahoo, tuna, grouper, snapper, mahi-mahi, mackerel, sailfish and marlin are all found in the deep blue off Ambergris Caye. Both half day and full day deep sea fishing trips are available.
Fishing right from the dock at Caribe Island Resort or wading the hard sand shallows in front of the resort is often productive. Small snapper, jacks, bonefish and other fish abound. Light spinning tackle using jigs or small spoons works well. However, the best fishing will be had when going out with a guide. It is well worth the price. The front desk staff at Caribe Island know all the best guides on Ambergris Caye and can quote prices and make arrangements for our guests. Guides will pick you up right at Caribe Island.
